I like homemade salad dressings because you get to control the amount of sweet, heat, or spice to your liking. But I also like them because you can keep it simple, without all the corn syrup and ingredients you can’t pronounce, let alone identify in a food line-up (and therefore should not be put into your body.
I often opt for a great vinaigrette or just a squeeze of lemon and a dash of olive oil but on those days when I want something a bit more decadently toothsome, I whip up one of a handful of creamy go-to dressings. This one features avocado, so it’s creamy, chock full of good-for-you-fat, and guilt-free. It’s also really delish on your favorite taco salad.
Mexicado Salad Dressing
A quick and creamy avocado-based salad dressing
Ingredients
- 1 large ripe avocado
- 2 large garlic cloves
- 1/4 cup extra virgin olive oil
- 1 Tbsp lime juice
- 1/2 cup whole Greek yogurt
- 1 tsp cumin
- 1 small handful cilantro leaves
- 1/2 tsp salt
- 1 tsp sriracha (optional)
Instructions
- Scoop avocado from its shell, removing the seed, and drop into blender or food processor.
- Add the rest of the ingredients and blend until smooth and pourable, taste and adjust seasoning to your liking.
- Serve on your favorite salad and enjoy!
